2024 Michelin Guide Texas

 

Michelin published its first Texas guide in 2024, covering restaurants in Houston, Austin, Dallas, Fort Worth and San Antonio. Truth BBQ was included among the inaugural Texas Bib Gourmand recipients, placing us within the first group of restaurants recognized when the guide officially arrived in the state.


That first edition was an important moment for Texas barbecue. Michelin has evaluated restaurants around the world for more than a century, but its expansion into Texas gave its inspectors the opportunity to consider a style of cooking built around offset smokers, live fire and long hours rather than traditional fine-dining conventions. Truth was proud to be among the barbecue restaurants introducing that international audience to what American-style Texas barbecue can be.

 

2025 Michelin Guide Texas

 

Retaining the Bib Gourmand in 2025 made Truth a two-time recipient. It also reinforced Houston’s place as one of the country’s leading food cities. Houston’s restaurant culture spans cuisines and traditions from around the world, and barbecue is an essential part of that story.


We’re honored to represent both Houston and Texas barbecue in the guide. At the same time, Michelin recognition hasn’t changed what we set out to do. The work still begins with carefully sourced meat, wood-burning offset smokers and a commitment to getting every cook right.

As Truth grew into the Houston Heights, the scale changed, but the approach didn’t. We still cook on wood-burning offset smokers and give each brisket the time and attention it needs.


Maintaining that standard becomes even more demanding when you’re smoking hundreds of briskets each week. Live fire doesn’t follow a fixed formula, and no two pieces of meat behave exactly the same way. Our pitroom team has to respond to changes in the weather, the wood and the cook itself while making sure the barbecue served each day still tastes unmistakably like Truth.


That same attention extends beyond brisket. It’s reflected in our ribs, turkey and house-made sausages, as well as the sides and desserts that complete the tray. Every part of the menu contributes to the experience, and every member of our team plays a role in maintaining the standard Michelin recognized.


For us, the Bib Gourmand affirms that barbecue belongs in the broader conversation about serious culinary craft. It doesn’t need elaborate plating or formal service to demonstrate skill. Sometimes, that skill is best expressed through a properly rendered slice of brisket served on butcher paper.
