A lot has changed since then. Truth has expanded to Houston, earned national recognition and landed in the Top 10 of Texas Monthly’s Top 50 BBQ list three times. But our Brenham location is still here, serving barbecue along the same stretch of highway where it all began.

From Houston, plan on roughly an hour and 15 minutes to an hour and a half behind the wheel, depending on where you’re starting and traffic. That makes Brenham close enough for a dedicated BBQ run, but far enough that it’s worth giving yourself some extra time to explore while you’re here.
Coming from somewhere else? Brenham’s location along US-290 also makes Truth an easy food stop if you’re traveling between Houston and Austin or building a road trip through this part of Central Texas.

What to Expect When You Get Here
We open at 11 a.m. Thursday through Sunday and serve until we sell out. If there’s a particular meat you have your heart set on, earlier is generally better. Barbecue isn’t something we can simply make more of on demand: our briskets, for example, spend 16 to 18 hours smoking over post oak in wood-burning offset smokers. Once the day’s barbecue is gone, it’s gone.
When it’s your turn to order, start with the meats. Brisket is ordered by weight, so you can ask for lean, fatty or a mix of both before adding ribs, sausage, turkey or whatever else catches your eye. From there, round out your tray with scratch-made sides, condiments and sauce. And take our advice: look at the cakes before you decide you’re full.
There’s no need to overthink your first visit. Come early enough to give yourself options, order a few things to share and settle in. Part of the fun of making the drive to Brenham is experiencing Truth in the small roadside setting where the whole thing started.
What to Order at Truth BBQ Brenham
If it’s your first time at Truth, start with the brisket. We smoke ours low and slow over post oak until it develops a dark bark on the outside while staying tender and juicy inside. You can order it lean, fatty or mixed; if you’re sharing, mixed is an easy way to try both.
From there, build out your tray based on how hungry you are:
- Brisket: The must-order, especially if this is your first visit.
- Pork ribs: A good second meat if you’re building a tray to share.
- Sausage: Try it alongside brisket or ribs when you want a little more variety.
- Turkey: Don’t overlook it. Our smoked turkey breast is wet-brined before hitting the pit, which keeps it juicy with just enough smoke.
- Sides: Mac and cheese, tater tot casserole, creamed corn, pinto beans and coleslaw are all made from scratch. Pick two or three for the table instead of treating them like an afterthought.
- Cake: Save room. Our cakes have become almost as much a part of the Truth experience as the barbecue itself.
For two people trying Truth for the first time, we’d suggest ordering enough brisket to share, adding a second meat, then choosing a couple of sides. You’ll get a much better sense of what we do than you would from ordering a single plate — and there’s nothing wrong with leaving with leftovers.
Why Visit Brenham If There’s a Truth BBQ in Houston?
If you’re closer to our Houston location, you don’t need to drive to Brenham to eat Truth BBQ. But there’s something different about visiting the place where it started.
Leonard Botello IV opened Truth BBQ in Brenham in 2015, serving barbecue from a small building off Highway 290. The operation was tiny compared with what Truth would eventually become. Just two years later, Texas Monthly ranked Truth No. 10 on its list of the Top 50 BBQ joints in Texas, helping turn the little roadside spot into a destination.
Houston came later. Our Heights location opened in 2019, giving us more room and bringing Truth closer to a much larger audience. But Brenham remains the original.
That’s really the reason to make the drive. You’re eating brisket and ribs in the place where Truth first found its footing, before the Houston restaurant, the awards and everything that followed. If you’re already a fan — or the kind of person who plans road trips around Texas barbecue — it’s worth seeing where the story began.
Make a Day of It: What Else to Do in Brenham
You could drive to Brenham, eat barbecue and head straight back to Houston. But if you’ve already made the trip, there’s plenty nearby to turn lunch into an easy day out.
The most obvious second stop is the Blue Bell Creamery, another Brenham institution. You can visit the Ice Cream Parlor for a scoop and check out the observation deck overlooking the production facility when it’s open. Just keep in mind that visitor hours can differ from Truth’s schedule, so check ahead if Blue Bell is part of your plan.
Downtown Brenham is also worth some time. It’s a compact historic downtown with shops, murals, restaurants and bars, making it easy to walk around for an hour or two after lunch without committing to another major attraction.
If you want to stretch the trip a little farther, Washington-on-the-Brazos State Historic Site is nearby and covers the site where delegates met in 1836 to declare Texas independence from Mexico. Check current access and operating information before heading over, particularly if you’re visiting while restoration work or special events are underway.
And if you’re coming in the spring, the drive itself can be part of the attraction. Washington County is known for its wildflowers, including Texas bluebonnets. Bloom timing varies from year to year, so check current conditions rather than planning a trip around a specific date.
An easy day trip from Houston might look like this:
- Houston → arrive at Truth BBQ Brenham for an early lunch → walk around downtown Brenham → stop for ice cream at Blue Bell → head back to Houston.
Not a bad way to spend a Saturday, especially when brisket is the reason for the drive.
