Is the BBQ at NRG Made the Same Way?
Yes. The same cooks who smoke the brisket, ribs and other meats at our Heights restaurant also handle the cooking at NRG Stadium.
Because the stadium uses J&R Manufacturing Oyler rotisserie smokers rather than the barrel-style offset smokers at our restaurant, Leonard worked with Brooklyn pitmaster Billy Durney of Hometown Bar-B-Que to adapt our process to the equipment. The goal was to produce the same quality and consistency at NRG, even in a much different setting.
We also wrap, hold and slice the meats the same way we do in the Heights. Serving tens of thousands of people at a major stadium requires a different kind of operation, but we weren’t interested in expanding our reach if it meant compromising the food. Whether you order at the restaurant or during a Texans game, it still has to meet our standards.
